Hoornse Klare
Hoornse Klare is a 'young genever' (jong jenever) according to traditional dutch recipe. It contains Juniper berry, koriander seeds and lemon. It's fresh and clean with a slightly sweet aftertaste. It is packed with flavour!
The klare ('clear') contains 41% alcohol. This is much more than the norm for young genever: 35% is normal. We think the botanicals work much better this way. A bit stubborn perhaps :) But it is always ok to add some water to taste.
Officially young genever contains up to 15% 'moutwijn' (malt wine, a distillate made from 100% grains). In contrast, 'oude jenever' (old genever) must contain at least 15% moutwijn. Because both our genevers are mashed, fermented and distilled integrally and fully 'on the grain' we deviate from the concept of adding malt wine. But, based on the recipe we calculate the klare contains 12.5% malt wine.
We use mostly 'vienna' malts, with a small part of rye (EBC40). We prefer beer malts over distillers malts because they are not optimised to starch to sugar conversion, they are optimised to flavour.
The klare is not aged on a wooden cask, but it IS aged: we use stainless steel to that purpose.
The klare is young genever re-invented! We are very proud of the product. Try it!
Hoornse Oude
A double-distilled, single-grain genever of 38% alcohol. The 'oude' is an old genever like no other: smooth, fresh & fruity, spicy yet sweet and accessible. It is aged for 1 year on refurbished bourbon barrels. Re-using bourbon barrels is common for scotch whisky's, but not so much for genevers. The american oak gives a very different flavour spectrum compared to french oak, with a slightly sweeter taste and tones of vanilla and caramel, where the french variant is more spicy. The contrast with the spices and ingredients we use gives an amazing end result.
This genever is made with juniper berry (of course), cardamom, orange and chili. The cardamom gives it the big flavour, spicy and zingy. The orange is subtle, and gives a lovely fruitiness. Chili is a surprising ingredient that gives a unique freshness that is somewhat hard to describe: it reminds of freshly cut grass. We do not know of anyone using this as an ingredient, but it works amazing. Fun fact: freshly distilled the chili alcohol is really hot. This is broken down during the aging process.
We use malted barley, corn and rye. Like the 'klare' everything is made integrally, we do not add malt wines separately. Malt contents are about 50% (regulations for old genever stipulate 15 to 100% malt wines).
Hoornse Double Gin
A double distilled gin of 40% alcohol. Awesome in a mix, but just as good neat! The combination of botanicals is spicy and powerful, yet subtle. It contains juniperberry (of course), cardamom, cloves and lime ('kaffir') leaf. The lime leaf gives it a unique freshness that is just amazing. The spicy cardamom and clove come later and leave a lovely spicy taste on the tongue.
Hoornse gin is not dry like for example a London Dry. Many gins are made with bought alcohol of close to 100% (96.5 azeotrope) which is re-distilled through a mixture of spices, after which it is diluted to the final alcohol percentage. We do things differently: our neutral alcohol is home-fermented and is already packed with flavour! We then distill all botanicals separately and blend them into the final product (In fact we do this for ALL our products!). This gives us perfect control and consistency and makes it excellent to drink neat or on the rocks. Try it!
Hoornse Whisky
Hoornse Whisky will be a 100% 'on the grain' distilled single malt whisky. 'Will', because this product is not yet available.
'On the grain' means the fermentation and distilling processes are done with all solid particles still in the mix. The malt is milled, mashed, fermented and distilled integrally. There are disadvantages to this method (it is very labor intensive, more complex to control the processes and you need to manage the risk of scorching) but the result is worth it.
Unless the distillate has been aged at least 3 years on a wooden cask it is not a whisky. Aging plays a major role in the final flavour, so it will be some years to come before this product is on sale. That said, a top whisky is our ultimate goal.
Botanicals
Not a product as such, but still worth mentioning: all botanical used in our products are distilled separately, and blended later into the final product. The ingredients of choice and the quantities in which they are used are the result of many tasting sessions, not the most unpleasant of jobs :) This method allows us to 'baseline' all botanicals and obtain full control and consistency.
Some (but by no means all) examples of botanicals we have experimented with are aniseed, liquorice, coffee, angelica root, lemongrass and elderberry blossom. Some of these may be used in future products.
